You could try a new launcher. I haven't seen a way to do this and it bugs me too.
I don't think a replacement launcher would help. The status bar clock is part of the framework.

It's silly they add that to all phones. let me choose if I would like a clock in my notification bar.

Muji is correct that its tied into the system framework. The only way you can remove it is to root or get in a custom rom that allows hiding it.

If I remember correctly Miui allows it.
I believe that all of the the CM7 roms allow it too.
