i havent had any problems with my phone after i got the update, everything is working great and battery life has increased for me

How has everything worked out for you so far? One of the things I do, when on stock, before updating is doing a factory reset after backing up the phone. This usually works best, and in the modding community is almost ALWAYS required when moving from ROM to ROM. A PITA for sure, but things tend to run a lot more smooth.
I would need Ollie to confirm, as I have not yet done this on my E4GT, but you should be able to flash a stock Gingerbread tar from your computer to get to GB from ICS. Again, as I have not done this, I am hoping Ollie can confirm.
Yes, that is the only way to go back.
Make a backup.
Do a factory reset.
Flash GingerBread tar via Odin.
Do another factory reset.
Restore from backup.

I just did that for the first time today on a phone I got off eBay. The phone worked fine with the exception of the headphone jack. Unfortunately, the person I bought the phone for uses the jack 80% of the time. So I had to get it all back to stock after rooting it and loading a custom recovery. Everything worked out well!
I also am not happy with ics on my sgs2 skyrocket from att. Screen freezes up on me, music and picture files double but are really not there every time I restart or shut down and restart phone. Battery life decreased drastically.
You can roll back to GingerBread using Odin or just flash ICS again using Odin.
